Make homemade Xima by following this recipe.

 

 

Ingredients

  • 3 cups water
  • 1 teaspoon salt
  • 1 cup white corn meal
  • 1 cup cold water

 

Directions

  1. In a large saucepan heat the 3 cups water and salt to boiling.
  2. Combine cold water and corn meal in a separate container. Mix well to remove lumps. Set aside.
  3. When water is boiling remove it from the heat. Stir or whisk in the corn meal mixture. When lumps are gone return the pan to the heat and return to a boil, stirring constantly, until the mixture returns to a boil.
  4. Cover, turn the heat to low and continue to cook for 5 minutes.

 

Yield: About 6 cups, Serves 4
