Xima
Make homemade Xima by following this recipe.
Ingredients
- 3 cups water
- 1 teaspoon salt
- 1 cup white corn meal
- 1 cup cold water
Directions
- In a large saucepan heat the 3 cups water and salt to boiling.
- Combine cold water and corn meal in a separate container. Mix well to remove lumps. Set aside.
- When water is boiling remove it from the heat. Stir or whisk in the corn meal mixture. When lumps are gone return the pan to the heat and return to a boil, stirring constantly, until the mixture returns to a boil.
- Cover, turn the heat to low and continue to cook for 5 minutes.
Yield: About 6 cups, Serves 4
