Tangy Vegetable Pasta Salad
This tangy vegetable pasta salad is a great addition to any meal and easy to make!
Ingredients
- 1/3 cup low sodium vegetable juice
- 2 tablespoons green onions, chopped
- 1 tablespoon vegetable oil
- 2 tablespoons lemon juice
- 1/2 teaspoon grated lemon peel
- 1 teaspoon sugar
- 1/2 teaspoon dried dill weed
- 1-1/2 cups dry spiral-shaped pasta, cooked
- 3 plum tomatoes, sliced crosswise
- 1/2 cup green pepper, chopped
- 1/2 cup radishes, sliced
- 1/2 cup cucumber, peeled and chopped
Directions
- In a large bowl, combine vegetable juice, onion, oil, lemon peel and juice, sugar and dill weed.
- Stir in remaining ingredients; chill
Serves 4.
