This tangy vegetable pasta salad is a great addition to any meal and easy to make! 

 

Ingredients

  • 1/3 cup low sodium vegetable juice
  • 2 tablespoons green onions, chopped
  • 1 tablespoon vegetable oilPhoto of pasta salad in a bowl.
  • 2 tablespoons lemon juice
  • 1/2 teaspoon grated lemon peel
  • 1 teaspoon sugar
  • 1/2 teaspoon dried dill weed
  • 1-1/2 cups dry spiral-shaped pasta, cooked
  • 3 plum tomatoes, sliced crosswise
  • 1/2 cup green pepper, chopped
  • 1/2 cup radishes, sliced
  • 1/2 cup cucumber, peeled and chopped

Directions

  1. In a large bowl, combine vegetable juice, onion, oil, lemon peel and juice, sugar and dill weed.
  2. Stir in remaining ingredients; chill

Serves 4.
