Stewed Okra with Tomatoes & Cilantro

Ingredients
- 1 tablespoon olive oil
- 1/2 small onion, chopped
- 1 clove garlic, minced
- 8 ounces tomatoes, peeled and chopped
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground cumin
- 1/8 teaspoon ground cloves
- 6 tablespoons chopped fresh cilantro
- 1/2 teaspoon salt
- 1/4 teaspoon pepper to taste
- 1-1/4 pounds okra
Directions

Sauté onion and garlic in oil over medium heat until translucent.

Add tomatoes, cinnamon, cumin, cloves and half the cilantro. Season with
salt and pepper. Bring to a boil.

Add okra and cook, stirring constantly for 1 to 2 minutes. Reduce heat to low,
simmer, stirring occasionally, for 20 to 30 minutes, until okra is tender.

Taste for spicing and seasoning, adjust if necessary. Stir in remaining
cilantro. Serve hot, warm or cold.
