Sautéed Summer Squash in Garlic Butter

Ingredients
- 1-1/4 pounds chopped summer squash
- 1 tablespoon unsalted butter
- 3 cloves minced garlic
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 green onion, thinly sliced
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon fresh lemon juice
Directions
- Chop summer squash into bite-size pieces.
- In a wide skillet over medium-high heat melt butter.
- Add summer squash and garlic and cook, stirring occasionally until squash pieces begin to brown and are just tender, 3 to 5 minutes.
- Season with salt and pepper and gently stir in green onion, cheese and lemon juice.
- Serve immediately.
