Give your freshly picked summer squash that extra flavor by chopping them up and following this sautéed summer squash in garlic butter recipe.

 

 

Ingredients

  • 1-1/4 pounds chopped summer squash
  • 1 tablespoon unsalted butter
  • 3 cloves minced garlic
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 green onion, thinly sliced
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon fresh lemon juice

 

Directions

  1. Chop summer squash into bite-size pieces.
  2. In a wide skillet over medium-high heat melt butter.
  3. Add summer squash and garlic and cook, stirring occasionally until squash pieces begin to brown and are just tender, 3 to 5 minutes.
  4. Season with salt and pepper and gently stir in green onion, cheese and lemon juice.
  5. Serve immediately.
