Roasted Red Potato and Garlic
A great side dish for meat and potato lovers, roasted red potatoes and garlic take around one hour to bake in the oven.
Ingredients
- 12 small red potatoes
- 12 cloves garlic
- 3 tablespoons olive oil
- 2 tablespoons fresh or 1 tablespoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Preheat oven to 375°F
- Scrub potatoes and pat dry with paper towel. Cut in half and place in glass baking dish. Peel garlic cloves, leaving whole, and sprinkle among potatoes in pan. Pour olive oil over potatoes and garlic, then sprinkle with thyme.
- Bake in a 375oF oven for one hour or until potatoes are fork tender. Season with salt and pepper.
