New Potato Salad
A delicious alternative for traditional potato salad made with eggs, new potato salad is a great side dish to take to any gathering.
Ingredients
- 2 pounds new potatoes, scrubbed
- 1/4 cup light mayonnaise
- 1/4 cup light sour cream
- 1 clove garlic, chopped
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon pepper
- 1 tablespoon chopped fresh dill
- 1 tablespoon Dijon style mustard
- 1/2 cup chopped green pepper
- 1/2 cup chopped red pepper
- 1/2 cup sliced red onion
- 1/2 ounces chopped celery
Directions
- Cook new potatoes in their skins in boiling salted water until tender but still firm. When cool enough to handle cut into bite-sized pieces. Chill.
- In a small bowl or measuring cup combine mayonnaise, sour cream, garlic, salt, pepper, dill and mustard. Mix well.
- Put potatoes in a large bowl. Add chopped peppers, onion and celery. Add dressing and mix gently until well combined. Adjust seasoning if needed. Store in the refrigerator.
