Mushrooms and Spinach
Create a delicious side dish of fresh mushrooms and spinach with this recipe.
Ingredients
- 1 pound mushrooms, cleaned and thinly sliced
- 2 tablespoons vegetable oil
- 1-1/2 teaspoons vegetable oil
- 2 gloves garlic, minced
- 1/2 cup onion, minced
- 5 cups cleaned baby spinach
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon pepper
Directions
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add mushrooms and cook without stirring for 2 minutes. Stir, continue cooking about 5 minutes, until mushrooms are golden brown, stirring occasionally.
- Add remaining 1-1/2 teaspoons olive oil to mushrooms then add garlic and onion. Cook, stirring, until onion has softened, about 3 minutes.
- Add spinach, salt and pepper and continue cooking while stirring until spinach is wilted, about 2 minutes.
