Add some freshness with an explosion of flavors to any lunch or dinner with this mandarin salad recipe.

 

 

Dressing Ingredients

  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar (not seasoned rice vinegar)
  • 2 tablespoons sugar
  • 1/2 teaspoon Chinese five spice powder, optional
  • 1/2 teaspoon salt
  • 2 tablespoons minced fresh parsley
  • Dash hot pepper sauce

 

Salad Ingredients

  • 8 cups mixed salad greens
  • 3/4 cup sweetened dried cranberries
  • 1 cup thinly sliced celery
  • 1 green onion, sliced
  • 1 11-ounce can Mandarin oranges, drained
  • 1/4 cup chopped toasted pecans

 

Directions

  1. In a medium bowl whisk together salad dressing ingredients until well blended.
  2. Combine all salad ingredients except pecans in a large bowl. Pour dressing ingredients over salad. Toss gently. Sprinkle pecans over tossed salad.
