Lettuce and Hominy Salad
Make your own homemade dressing to mix with your hominy salad.
Dressing
- 1 15-ounce can cannellini beans, drained, rinsed, and drained again or 2 cups cooked
- 1/4 cup diced jalapeño chili, minced
- 1/4 cup fresh lime juice
- 1/4 cup hot water
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- 1 teaspoon hot sauce
- 1 clove garlic, halved
- 1/2 teaspoon kosher salt
Salad
- 1 pound romaine lettuce, cleaned, cored, dried and torn into pieces
- 1 small head radicchio, cleaned and torn into pieces
- 1 15-ounce can hominy, drained, rinsed and drained again
- 1 cup shredded carrot
- 3 green onions, sliced, white and green parts
- 1/3 cup sliced ripe olives
- Combine all dressing ingredients in a blender and blend until smooth.
- In a large bowl combine salad ingredients. Just prior to serving add desired amount of dressing and toss well. Serve with any remaining dressing on the side.
