Make your own homemade dressing to mix with your hominy salad.

 

 

Dressing

  • 1 15-ounce can cannellini beans, drained, rinsed, and drained again or 2 cups cooked
  • 1/4 cup diced jalapeño chili, minced
  • 1/4 cup fresh lime juice
  • 1/4 cup hot water
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon hot sauce
  • 1 clove garlic, halved
  • 1/2 teaspoon kosher salt

 

Salad

  • 1 pound romaine lettuce, cleaned, cored, dried and torn into pieces
  • 1 small head radicchio, cleaned and torn into pieces
  • 1 15-ounce can hominy, drained, rinsed and drained again
  • 1 cup shredded carrot
  • 3 green onions, sliced, white and green parts
  • 1/3 cup sliced ripe olives

 

  1. Combine all dressing ingredients in a blender and blend until smooth.
  2. In a large bowl combine salad ingredients. Just prior to serving add desired amount of dressing and toss well. Serve with any remaining dressing on the side.
