Have a nice, warm meal during the winter ready in 30 to 60 minutes with this green beans and ground beef stew recipe.
Ingredients
- 1 pound lean ground beef
- 1 tablespoon canola oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 14-1/2 ounce can diced tomatoes, no salt added
- 1/2 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/8 teaspoon ground allspice
- 1 cups water
- 1 4-ounce can tomato sauce, no salt added
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1 pound frozen green beans
- 3 cups cooked brown rice
Directions
- Heat a large pot or Dutch oven. Add ground meat and brown. Remove cooked meat from the pot, drain if needed.
- Add oil to the empty pot over medium heat. When hot add the chopped onion and cook, stirring occasionally, until softened, about 5 minutes. Add minced garlic and continue cooking for 30 seconds.
- Return meat to the pot. Stir in tomatoes, cumin, coriander, allspice, tomato sauce, water, salt and pepper. Add green beans and bring to a boil, reduce heat to low, cover and simmer, until green beans are tender, 30 to 60 minutes. Add more water if stew is too thick.
- Serve over hot rice.
