Have a nice, warm meal during the winter ready in 30 to 60 minutes with this green beans and ground beef stew recipe.

 

 

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon canola oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 14-1/2 ounce can diced tomatoes, no salt added
  • 1/2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/8 teaspoon ground allspice
  • 1 cups water
  • 1 4-ounce can tomato sauce, no salt added
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 pound frozen green beans
  • 3 cups cooked brown rice

 

Directions

  1. Heat a large pot or Dutch oven. Add ground meat and brown. Remove cooked meat from the pot, drain if needed.
  2. Add oil to the empty pot over medium heat. When hot add the chopped onion and cook, stirring occasionally, until softened, about 5 minutes. Add minced garlic and continue cooking for 30 seconds.
  3. Return meat to the pot. Stir in tomatoes, cumin, coriander, allspice, tomato sauce, water, salt and pepper. Add green beans and bring to a boil, reduce heat to low, cover and simmer, until green beans are tender, 30 to 60 minutes. Add more water if stew is too thick.
  4. Serve over hot rice.
