Green Beans and Caramelized Sweet Onions
Make a simple and delicious vegetable side dish with sautéed green beans and caramelized sweet onions.
Ingredients
- 1 pound fresh green beans, washed and trimmed
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1-1/2 teaspoons brown sugar
- 1/2 pound sweet onions, peeled and cut into wedges
- 1 tablespoon red wine vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Directions
- Bring 1 quart water to boiling. Add green beans, cover and cook 3 to 4 minutes, until crisp tender. Drain and submerge in ice water for 3 to 4 minutes to stop the cooking. Drain again.
- Heat a large skillet on medium-high heat. Add olive oil, butter and brown sugar. When butter is melted add onions and sauté 2 minutes. Reduce heat to medium-low. Add vinegar and continue sautéing 10 minutes or until onions are golden brown.
- When onions are golden brown raise heat to medium-high. Add drained green beans. Sauté beans with onions an additional 5 minutes or until hot. Season with salt and pepper.
