Bring a Mediterranean flavor to the party by making this quick and easy Greek garbanzo salad.

 

Ingredients

  • 1-1/2 cups cooked or 1 can (15 ounces) garbanzo beans, drained
  • 1/2 cup thinly sliced red onion
  • 1/2 cup diced tomato
  • 1/2 cup chopped green bell pepper
  • 3 tablespoons rice vinegar or apple cider vinegar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons extra virgin olive oil
  • 1 to 2 tablespoons minced garlic
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

 

Directions

  1. Combine all ingredients in large bowl.
  2. Cover and let marinate at room temperature several hours. Refrigerate.
