Greek Garbonzo Salad
Bring a Mediterranean flavor to the party by making this quick and easy Greek garbanzo salad.
Ingredients
- 1-1/2 cups cooked or 1 can (15 ounces) garbanzo beans, drained
- 1/2 cup thinly sliced red onion
- 1/2 cup diced tomato
- 1/2 cup chopped green bell pepper
- 3 tablespoons rice vinegar or apple cider vinegar
- 2 tablespoons fresh lemon juice
- 2 teaspoons extra virgin olive oil
- 1 to 2 tablespoons minced garlic
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Directions
- Combine all ingredients in large bowl.
- Cover and let marinate at room temperature several hours. Refrigerate.
