Grape and White Bean Salad

Ingredients
- 1 cup red seedless grapes
- 1 can (15-ounces) small white beans, drained
- 1/2 cup celery, diced
- 1/4 cup green onions, minced
- 2 tablespoons parsley, chopped
- 2 tablespoons extra virgin olive or canola oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon-style mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- In a measuring cup whisk together extra virgin olive or canola oil, lemon juice, mustard, salt and pepper.
- In a medium bowl combine grapes, white beans, celery, green onions and parsley. Pour dressing over top. Mix well.
- Serve on lettuce leaves if desired.
