Do more with your salad by adding the fresh flavors of grapes and white beans; make your own homemade dressing to top your grape and white bean salad by following this recipe.

 

 

Ingredients

  • 1 cup red seedless grapes
  • 1 can (15-ounces) small white beans, drained
  • 1/2 cup celery, diced
  • 1/4 cup green onions, minced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons extra virgin olive or canola oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon-style mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

 

Directions

  1. In a measuring cup whisk together extra virgin olive or canola oil, lemon juice, mustard, salt and pepper.
  2. In a medium bowl combine grapes, white beans, celery, green onions and parsley. Pour dressing over top. Mix well.
  3. Serve on lettuce leaves if desired.
