Spice up your evening meal by creating a deconstructed egg roll with ground pork, beef or chicken.

 

 

Ingredients

  • 2 teaspoons canola oil
  • 3/4 pound ground pork*
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger
  • 1/4 teaspoon black pepper
  • 4 cups shredded cabbage or coleslaw mix
  • 1/4 cup sliced green onions
  • 1 tablespoon light soy sauce
  • 1 teaspoon toasted sesame oil
  • 3 cups cooked brown rice**

 

Directions

  1. Heat a skillet over medium-high heat. Add oil. When oil is hot add ground pork. Break up meat while it cooks and continue cooking until cooked through. Drain if necessary.
  2. Add garlic, ginger and pepper and cook 30 seconds.
  3. Add shredded cabbage or coleslaw mix and green onions. Stir well and continue to cook until wilted, 3 to 4 minutes. Remove from heat.
  4. Stir in soy sauce and sesame oil.
  5. Serve in a bowl over cooked brown rice. Serve with additional soy sauce if desired.
