Cool Lime Vegetables
Add some zest to your vegetables by using this recipe to make a cool ime vegetable mixture.
Ingredients
- 2 cups zucchini, sliced
- 1 cup fresh mushrooms, sliced
- 1 cup fresh or frozen corn kernels
- 1 cup chopped tomatoes
- 2 tablespoon fresh lime juice
- 1-1/2 teaspoons extra virgin olive oil
- 1/2 teaspoon dried oregano leaves
Directions
- Steam sliced vegetables, except tomatoes,in a small amount of water until just tender, about 5 minutes. Drain and place in serving bowl to cool.
- Mix lime juice and extra virgin olive oil. Whisk in oregano.
- Pour lime juice-oil mixture over cool vegetables. Add tomatoes. Mix well.
