Add some zest to your vegetables by using this recipe to make a cool ime vegetable mixture.

 

Ingredients

  • 2 cups zucchini, sliced
  • 1 cup fresh mushrooms, sliced
  • 1 cup fresh or frozen corn kernels
  • 1 cup chopped tomatoes
  • 2 tablespoon fresh lime juice
  • 1-1/2 teaspoons extra virgin olive oil
  • 1/2 teaspoon dried oregano leaves

 

Directions

  1. Steam sliced vegetables, except tomatoes,in a small amount of water until just tender, about 5 minutes. Drain and place in serving bowl to cool.
  2. Mix lime juice and extra virgin olive oil. Whisk in oregano.
  3. Pour lime juice-oil mixture over cool vegetables. Add tomatoes. Mix well.
