Clafouti
This is a simple basic recipe for clafouti, which is a dessert made with fruit and a custard-like creamy filling. It’s a delicious breakfast treat and easy to make!
Ingredients
- 2 cups blueberries, peaches, plums or cherries
- 3/4 cup all-purpose flour
- 1 cup low-fat milk
- 1 cup plan low-fat yogurt
- 1/2 cup sugar
- 1/4 teaspoon kosher salt
- 3 large eggs
- 1 teaspoon vanilla
- 1 tablespoon powdered sugar
Directions
- Prepare fruit by washing and drying. If using peaches or plums remove pits and chop into bit-sized pieces. Cherries need to be stemmed and pitted.
- Preheat oven to 375 F. Spray an 8-inch square pan with nonstick vegetable spray. Place fruit into prepared dish.
- Whisk together flour, milk, yogurt, sugar, salt, eggs and vanilla until well blended. Set aside for 5 minutes.
- Pour batter over fruit.
- Bake in preheated oven for 40 to 42 minutes or until dessert is set to the touch in the center. Let cook at least 10 minutes.
- Sprinkle with powdered sugar. Serve warm or at room temperature.
