Try out this fun take on a simple classic chicken salad sandwich. 

 

Ingredients

  • 2 cups chopped cooked chicken breasts 1/2 cup chopped apples, unpeeled

  • 1/4 cup chopped celery

  • 1/4 cup chopped walnuts or pecans

  • 1/3 cup nonfat mayonnaise

  • 1 teaspoon fresh lemon juice

  • 8 slices raisin bread

  • 4 pieces leaf lettuce

Directions

  1. Combine all ingredients except bread and lettuce and mix. Make sandwiches with bread and lettuce.
