Ingredients

  • 1 lb round steak, thinly sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 zucchini, cut into half-moons
  • 1 head bok choy, chopped
  • 1-2 tsp garlic powder
  • 1-2 tsp ground ginger
  • 1 tbsp low sodium soy sauce
  • 2 tbsp cooking oil (canola, avocado, or peanut)
  • 1 C brown rice, cooked according to package directions.

 

Directions

Heat cooking oil in a large skillet until shimmering. Carefully place onions and bell peppers in hot oil. Cook, stirring occasionally until soft and starting to turn brown in color. Add sliced round steak to skillet and cook until not longer pink. Season with garlic powder, ginger, and soy sauce. Add zucchini to skillet, stirring frequently until soft and starting to brown. Add bok choy to the skillet, stirring frequently until soft and wilted.

 

Serve over cooked rice
