This tangy vegetable pasta salad is a great addition to any meal and easy to make!
Ingredients
1/3 cup low sodium vegetable juice
2 tablespoons green onions, chopped
1 tablespoon vegetable oil
2 tablespoons lemon juice
1/2 teaspoon grated lemon peel
1 teaspoon sugar
1/2 teaspoon dried dill weed
1-1/2 cups dry spiral-shaped pasta, cooked
3 plum tomatoes, sliced crosswise
1/2 cup green pepper, chopped
1/2 cup radishes, sliced
1/2 cup cucumber, peeled and chopped
Directions
In a large bowl, combine vegetable juice, onion, oil, lemon peel and juice, sugar and dill weed.
Stir in remaining ingredients; chill
Serves 4.
