Ingredients
1-1/4 pounds chopped summer squash
1 tablespoon unsalted butter
3 cloves minced garlic
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 green onion, thinly sliced
1/4 cup grated Parmesan cheese
1/4 teaspoon fresh lemon juice
Directions
Chop summer squash into bite-size pieces.
In a wide skillet over medium-high heat melt butter.
Add summer squash and garlic and cook, stirring occasionally until squash pieces begin to brown and are just tender, 3 to 5 minutes.
Season with salt and pepper and gently stir in green onion, cheese and lemon juice.
Serve immediately.
