A delicious alternative for traditional potato salad made with eggs, new potato salad is a great side dish to take to any gathering.
Ingredients
2 pounds new potatoes, scrubbed
1/4 cup light mayonnaise
1/4 cup light sour cream
1 clove garlic, chopped
1/2 teaspoon Kosher salt
1/2 teaspoon pepper
1 tablespoon chopped fresh dill
1 tablespoon Dijon style mustard
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1/2 cup sliced red onion
1/2 ounces chopped celery
Directions
Cook new potatoes in their skins in boiling salted water until tender but still firm. When cool enough to handle cut into bite-sized pieces. Chill.
In a small bowl or measuring cup combine mayonnaise, sour cream, garlic, salt, pepper, dill and mustard. Mix well.
Put potatoes in a large bowl. Add chopped peppers, onion and celery. Add dressing and mix gently until well combined. Adjust seasoning if needed. Store in the refrigerator.
