Create a delicious side dish of fresh mushrooms and spinach with this recipe.
Ingredients
1 pound mushrooms, cleaned and thinly sliced
2 tablespoons vegetable oil
1-1/2 teaspoons vegetable oil
2 gloves garlic, minced
1/2 cup onion, minced
5 cups cleaned baby spinach
1/4 teaspoon Kosher salt
1/4 teaspoon pepper
Directions
Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add mushrooms and cook without stirring for 2 minutes. Stir, continue cooking about 5 minutes, until mushrooms are golden brown, stirring occasionally.
Add remaining 1-1/2 teaspoons olive oil to mushrooms then add garlic and onion. Cook, stirring, until onion has softened, about 3 minutes.
Add spinach, salt and pepper and continue cooking while stirring until spinach is wilted, about 2 minutes.
