Ingredients
1 cup red seedless grapes
1 can (15-ounces) small white beans, drained
1/2 cup celery, diced
1/4 cup green onions, minced
2 tablespoons parsley, chopped
2 tablespoons extra virgin olive or canola oil
2 tablespoons lemon juice
1 tablespoon Dijon-style mustard
1/4 teaspoon salt
1/4 teaspoon pepper
Directions
In a measuring cup whisk together extra virgin olive or canola oil, lemon juice, mustard, salt and pepper.
In a medium bowl combine grapes, white beans, celery, green onions and parsley. Pour dressing over top. Mix well.
Serve on lettuce leaves if desired.
